For Pineapple Salsa:

  • 1 cup fresh pineapple, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeno, seeds removed and finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

For Coconut Rice:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/4 teaspoon salt

For Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a medium bowl, combine all the ingredients for the pineapple salsa: pineapple, red bell pepper, red onion, jalapeno, cilantro, lime juice, salt, and pepper. Mix well and set aside to let the flavors meld.
  2. Rinse the jasmine rice in cold water until the water runs clear. In a saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Fluff the rice with a fork.
  3. In a mixing bowl, combine the minced garlic, ground cumin, paprika, salt, and black pepper. Rub the chicken breasts with this spice mixture, ensuring they are well coated.
  4. Heat the olive oil in a skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-8 minutes per side or until they reach an internal temperature of 165°F (74°C). Remove from heat and let the chicken rest for a few minutes before slicing.
