Recipe: Caramelized Onion and Goat Cheese Tart

 

Ingredients:

For the Tart Crust:

– 1 1/4 cups all-purpose flour

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, cold and cubed

– 3-4 tablespoons ice water

For the Filling:

– 3 large onions, thinly sliced

– 2 tablespoons olive oil

– 2 tablespoons butter

– 1 teaspoon sugar

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons balsamic vinegar

– 4 ounces goat cheese, crumbled

– Fresh thyme leaves, for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  1. In a large mixing bowl, combine the flour and salt for the tart crust. Add the cold, cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
  1. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  1. While the dough chills, prepare the caramelized onions. Heat the olive oil and butter in a large skillet over medium-low heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, for about 30-40 minutes until the onions are golden brown and caramelized.
  1. Remove the tart dough from the refrigerator. On a lightly floured surface, roll out the dough into a circle large enough to fit your tart pan. Transfer the rolled-out dough to the tart pan and press it gently into the bottom and sides. Trim any excess dough.
  1. Spread the caramelized onions evenly over the tart crust. Drizzle the balsamic vinegar over the onions.
  1. Crumble the goat cheese on top of the onions, distributing it evenly.
  1. Place the tart in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the cheese has melted and slightly browned.
  1. Remove the tart from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves, if desired.
  1. Slice the caramelized onion and goat cheese tart into wedges and serve warm or at room temperature. It makes a delightful appetizer or light lunch option.
