Recipe: Peach, Grape, and Cherry Summer Salad
Ingredients:
– 2 ripe peaches
– 1 cup seedless grapes (green, red, or a combination)
– 1 cup cherries (pitted)
– 1/4 cup fresh mint leaves
– 1/4 cup crumbled feta cheese
– 1/4 cup chopped almonds
For the Dressing:
– 2 tablespoons extra-virgin olive oil
– 2 tablespoons balsamic vinegar
– 1 tablespoon honey
– Salt and pepper to taste
Instructions:
- Wash and dry the peaches, grapes, and cherries. Cut the peaches into thin wedges, halve the grapes, and slice the cherries in half. Place them all in a large salad bowl.
- Tear the mint leaves into small pieces and add them to the bowl. Mix gently to combine.
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust the seasoning according to your taste.
- Pour the dressing over the fruit mixture and toss gently to coat all the ingredients evenly.
- Sprinkle the crumbled feta cheese and chopped almonds over the salad.
- Allow the salad to sit for about 10 minutes to allow the flavors to meld together.
- Serve the Peach, Grape, and Cherry Summer Salad chilled as a refreshing side dish or a light lunch. Enjoy!
Optional Variation: You can add a handful of arugula or mixed greens to the salad to add more freshness and texture.
