Recipe: Caramelized Onion and Goat Cheese Tart
Ingredients:
For the Tart Crust:
– 1 1/4 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, cold and cubed
– 3-4 tablespoons ice water
For the Filling:
– 3 large onions, thinly sliced
– 2 tablespoons olive oil
– 2 tablespoons butter
– 1 teaspoon sugar
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons balsamic vinegar
– 4 ounces goat cheese, crumbled
– Fresh thyme leaves, for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the flour and salt for the tart crust. Add the cold, cubed butter and use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overmix. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- While the dough chills, prepare the caramelized onions. Heat the olive oil and butter in a large skillet over medium-low heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, for about 30-40 minutes until the onions are golden brown and caramelized.
- Remove the tart dough from the refrigerator. On a lightly floured surface, roll out the dough into a circle large enough to fit your tart pan. Transfer the rolled-out dough to the tart pan and press it gently into the bottom and sides. Trim any excess dough.
- Spread the caramelized onions evenly over the tart crust. Drizzle the balsamic vinegar over the onions.
- Crumble the goat cheese on top of the onions, distributing it evenly.
- Place the tart in the preheated oven and bake for 25-30 minutes, or until the crust is golden brown and the cheese has melted and slightly browned.
- Remove the tart from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves, if desired.
- Slice the caramelized onion and goat cheese tart into wedges and serve warm or at room temperature. It makes a delightful appetizer or light lunch option.
